The realization of the 2nd International Congress of Gastronomy Schools is of particular importance for allowing the exchange of knowledge among those who are dedicated to the culinary art. The event is especially concerned with food habits in society as well as the valuing of cultural basis that emerge from the approaches to food security, human nutrition and gastronomy. It also aims to promote cultural, academic, professional and scientific exchange among participants under the theme proposed for this edition: Food, Health & Hospitality: the role of gastronomy in society.

History

The Congress of Gastronomy Schools first happened as an initiative of the La Salle College School of Gastronomy, Colombia, and its first edition was realized on October 2011, in Bogota, approaching the theme “Educating the Professional Gastronome”. In that occasion, Brazil was chosen to host the next international edition of the event, to be held in Brasília-DF, so that this meeting could take place jointly with the Brazilian Fair of Gastronomy, another important event in the area.

The congress will be carried out with the cooperation and participation of several public institutions and members of the International Network of Gastronomy Schools, established during the First International Congress of Gastronomy Schools in Bogota. They are: Universidade Federal de Pelotas (UFPel), Instituto Fedral Sulriograndense de Education (IFSUL), IF Santa Catarina (IFSC), IF Brasilia (IFB), Universidade de Brasilia (UNB), Universidade Federal de Ciências da Saúde de Porto Alegre (UFCSPA), La Salle College (LCI). Partners and supporters: CAPES, SINDOHBAR and French Embassy in Brazil.

The advent of the internationalization of gastronomic cuisine and globalized knowledge, together with the exchange of experiences, strengthen meaningful exchanges that will help deal with the new events that will occur in Brazil, like the World Cup in 2014 and the Olympics in 2016, making it possible for the country to adapt to a new political, economic and social scenery. In this context, the spirit of scientific-technical cooperation allows the discussion of ideas for the growth of areas concerning hotels, industry, hospitality and health with emphasis on food, so as to meet the increasing demands and aspirations of a consuming society while giving participants an overview of gastronomic aspects worldwide, competitively.
